School is out!!!! The kids are home.... AND THEY ARE ALWAYS HUNGRY!!!
With summer FINALLY here we decided to streamline our Family Dinners down to a simple Taco Bar. The idea of trying to come up with new and exciting meals every week has me a little flustered and takes away from enjoying family time. Tacos are easy, filling and perfect for everyone, even the picky ones! (and the left overs are a gift!)

Tacos at our house are pretty much anything but Tacos... it's hilarious. We tend to go for a soft taco... nacho... or a taco rice bowl. There is something for everyone, regardless if you like tacos or not.
To spice things up, we feature different ingredients each week. Sometimes corn chips instead of tortillas, or chicken instead of beef, or ranch instead of salsa. But Tacos it will now be.... each week... because it's quick and easy and who wants to be in the kitchen more than we have to be.
But more than that, saving ourselves from decision fatigue just makes sense. Serving a good hot nutritious meal is a rarity these days. Coming around the dinner table is a lot art!
We say, Bring It Back!!!
Let the kids remember your family table the way you remember grandma's.
The food was simple, plentiful.... the table beautiful.... and she always served dinner with a smile.
Family Dinner Night "Tacos but not Tacos"
When I was a little girl attending Turner Elementary School, my grandmother Lois and Miss Bernice, the OG Lunch Ladies, came up with Tacos But Not Tacos. It was a hit at lunchtime and became a staple in our family, we even had it for Christmas Dinner one year when I was younger because everyone liked it so much. "Taco But Not Tacos" consisted of a healthy scoop of seasoned ground beef served over corn chips with cheese and lettuce. So simple, but what an impact on my young life! Lunch time never tasted so good!!
One of the highlights of the day was seeing grandma and her smile behind the lunch counter. We pretty much thought it was the best lunch on the planet next to Pizza Burgers. Do they still serve either of these at the school? I don't want to date myself here, but that would have been in the early 80's when I graced the halls of Turner Elementary. Or the hot yeast rolls.... mmmmmmm.
It's about the memories... not the food.
Get the whole family involved, give the kids a part in making this a special time. Set a beautiful table, put some music on, and fill the house with laughter. I'm a firm believer that if they see family time modeled now, they will come back home later and bring the grandkids.... bonus!!
